2015 Time Capsule / Paso Robles

Blend:                 75% Cabernet Sauvignon, 15% Petite Verdot, 10% Malbec
Oak Regime:        Aged for 21 months in 100% French Oak from different forests in the Centre of France region that include: Allier, Bertrange, and the super tight grain of Tronçais & Jupilles. These are special barrels that range from M+ to Heavy toast to bring out a wine’s darkest secrets.

Color:                 Deep Garnet Red
On the nose:        Bright, Ethereal nose with red berry fruit with hints of cassis and aromas so dense they have a velvet texture
On the palate:     Our Flagship and our ode to the classic Bordelaise blend. A gorgeously rounded mouth feel greets you. The seduction begins with loads of red berry fruit, boysenberry, black currant and hints of mocha wrapped in a massive velvet structure. Elegantly caressing in its texture as layers of vanilla laced black currant and rich red fruit cascade into a sexy oak finish.  Like being spanked with a velvet glove… its something to be savored and experienced. Enjoy with candlelight.
Pairing recommendations: Rack of Lamb with a demi-glace and root vegetables. Another classic favorite would be the bacon-wrapped tenderloin with a rich reduction or a blast from the past—wait for it—a tarragon laden Béarnaise sauce.
 

 

2015 Ecliptic / Paso Robles

Blend:                 55% Syrah, 45% Cabernet Sauvignon
Oak Regime:        Aged for 20 months in 100% French small Barrique with deep toast
Cases Made:        84 cases bottled unfiltered Very Limited: 2 per club member
Alc: 15.0   Ph: 3.75  TA: .53
Color:                 Deep Dark reddish purple moving to black.
On the nose:        Deep sultry nose of strawberry-rubarb, brambly currants and anise laced crème brûlée.
On the palate:     Rich red berry, blueberry and black currant grace a velvet mouth feel that is bound to a bold tannic structure. A decadent mouthfeel lingers long on the palate with silken fruit that trails into a creamy oak finish. This is a temptress!
Pairing recommendations: A sultry wine that whispers richness and texture. I recommend Chateaubriand or roasted meats with a rich sauce. Use the sauce liberally in many places. A rich stew with crusty country bread on a cold winter night by the fire would work as well.
 

 

2015 Metric / Paso Robles

Blend:                 54% Tempranillo, 46% Cabernet Sauvignon
Oak Regime:        Aged for 21 months in 50% French Oak, 50% Romanian Oak.
Bottled:              88 cases bottled unfiltered Very Limited: 2 per club member
Alc: 15.1 Ph:  3.8   TA: .56
Color:                 Deep Purple… Almost black.
On the nose:        Dense black hole of dark berry fruit with a rich toasted oak.
On the palate:     Two Bulls meet head to head…. Big earthy plum and dark berry fruit with layers of earth, mushroom and black currant. Red & black berry fruit that build to a monster structure.  Mouth filling tannin turn to velvet and trail into a lengthy oak finish. This is young and can age for some time.  Don’t be afraid of the two Bulls, they just like to play rough. Invite them to dinner and enjoy their company.
Pairing recommendations: This wine screams for Braised short ribs with polenta. My second choice would be smoked long bone pork ribs with a spicy dry rub and creamy grits on the side. Something about Tempranillo and corn that is just magic.
 

 

2015 Cabernet Sauvignon / Paso Robles

Blend:                 87% Cabernet Sauvignon, 13% Petite Verdot
Oak Regime:        Aged for 21 months in 100% French Oak from different forests in the Centre of France region that include Tronçais, Never and Allier.
Cases Made:       198 cases bottled unfiltered
Alc: 14.9   Ph: 3.5 TA:  .59
Color:                 Deep rich Ruby Red
On the nose:        Bright Red berry fruit with hints of cassis, peppercorn and cream.
On the palate:     Wow, an impressive wine with loads of big berry fruit, black currant, cassis, peppercorn and liquorice wrapped in a massive velvet structure. Seductive in its texture as layers of vanilla laced fruit cascade into a sexy oak finish.  A big rich monster that is accessible now or if you can wait will improve with time. This could easily be laid down for 10-15 years.
Pairing recommendations: Tomahawk Steak done au poive with a brandy cream sauce. Stick me in the ground, bury me and I’m done. Any grilled meats with spice rubs or roast will love this wine.  When it gets cold it will warm you with a winter pot roast or beef stew with crusty French country bread.
 

 

2015 Cabernet Franc / Paso Robles / Estate

Blend:                 80% Cabernet Franc, 20% Cabernet Sauvignon,
Oak Regime:        Aged for 21 months in 100% French Oak from different forests in the Centre of France region that include Tronçais, Never and Allier.
Cases Made:        111 bottled unfiltered Very Limited: 3 per club member
Alc: 14.7   Ph: 3.45 TA:  .70
Color:                 Deep Ruby Red
On the nose:        Bright berry fruit and peppercorn laced with violets and hints of cream
On the palate:     Big berry fruit is immediate with hints of green peppercorn that turns to dark chocolate with layers of cherry, raspberry with toasty oak woven through-out. Lush and intense yet ethereal in its scope.  It seems to operate at a higher vibration and will take you through a portal to another dimension.
Pairing recommendations: Garlic stuffed roast leg of lamb assorted black and green olives, herbs and au jus. Or pan seared chicken finished by braising in the oven with olives and anchovies & jus. If you have not guessed the theme… Cab Franc pairs really well with game and loves the brine.
 

 

2015 Malbec / Paso Robles

Blend:                 76% Malbec, 15% Cabernet Sauvignon, 9% Petite Verdot
Oak Regime:        Aged for 20 months in 100% French Oak from Tronçais and Allier toasted from medium to Heavy toast levels to bring out the natural sweetness of the fruit and its darker characteristics.

Alc: 14.7   Ph: 3.75 TA:  .56
Color:                 Deep Blood red that is bright violet around the edges
On the nose:        Bright red berry fruit, black cherry, clove and mocha laced cream
On the palate:     Immediately a decadent mouthfeel that is earthy and lush with plum & black cherry fruit with hints of black liqorice.. The mid palate builds in size with a prolonged silken texture that turns to a creamy mocha and toasted oak finish. In a word… sexy!
Pairing recommendations: Meat. Meat & Meat. Roasts, stewed lamb shank, and all meat grilled over an open fire. The rich fruit in Malbec loves the smoke and the spice. Dry rub ribs or a Santa Maria tri-tip will make this wine sing.
 

 

2015 Zinfandel / Paso Robles / Estate

Blend:                 90% Zinfandel, 8% Petit Sirah, 2% Syrah
Oak Regime:        Aged for 20 months in 70% French Oak and 30% American Oak.
Bottled:               unfined & unfiltered
Alc: 15.3   Ph: 3.35 TA:  .68
Color:                 Deep Purple almost black with vibrant hints of red around the edges.
On the nose:        Bright Red berry fruit with hints of spice and vanilla laced with hints of toasty oak
On the palate:     Immediate, Big Mouthfeel! Wow A monster of a wine with rich concentrated red and black fruit dancing with lively acid with hints of cranberry. Huge structure for a Zin that is long on the palate the wine trails into a toasty creme brulée.
Pairing recommendations: This wine has plenty of acid to stand up to any big fatty sauce.  Perfect for grilled meats and the BBQ because of its spiciness, However, my favorite is with a big Italian red sauce dish with eggplant or with spicy sausage.
